　　2012年，潘佳辉带着精湛的面点小吃制作技艺，从台湾来到武汉，渴望在这座城市寻觅懂得台湾风味的知音。

　　潘佳辉坦言，他的店是两岸风味碰撞的试验场，在尽可能还原台湾风味的同时，也做了些许改变。例如调味上，椒盐多撒一把，带出武汉人偏爱的重口；冬瓜茶减去两成糖，更贴合江城人的味蕾。潘佳辉说，美食跨海峡，既要“根正苗红”，更要“入乡随俗”。

　　潘佳辉感慨，这座九省通衢的江城，与美食云集的宝岛台湾，虽相隔千里，却都用最宽厚的胸怀，将天南地北的风味揽入怀中，拥有相似的烟火气。

　　谈及未来，潘佳辉称，计划打造武汉版“台湾美食街”，让猪血糕和热干面“拜个码头”，蚵仔煎与莲藕汤“认个亲家”。他表示。美食就该像长江水，兼容并蓄更有生命力。
